Apple Cinnamon Quinoa

I’ve had a bag of quinoa sitting unopened in my pantry for quite some time and have been wanting to give it a try, so this morning I finally took the plunge and I have to say it was quite delicious.  I found the recipe here.

Apple Cinnamon Quinoa

Ingredients:

  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 tsp pure vanilla extract
  • 1 large Gala apple, diced
  • 1 Tbsp honey
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 1/4 cup chopped pecans

Directions:
1. Rinse quinoa well.  Combine the water, milk, vanilla, and quinoa in a small saucepan.  Bring to a boil, then reduce heat to low and cook for 15 minutes (until quinoa is translucent and the white germ is visible).

2.  Just before serving, microwave the diced apple, honey and spices for 1 – 2 minutes (apples should be slightly softened and warmed).  Combine the apple mixture with the cooked quinoa.

3.  Divide into two bowls and top with chopped pecans.  Makes 2 servings.
