Sunday Morning Breakfast

I love Sunday mornings, because Sunday mornings consist of yummy breakfasts.  On the menu this morning were mini frittatas (modified from the recipe here) and pancakes.  This was the first time I’ve made the frittatas, but they will definitely become a regular in our household.

Mini Frittatas


  • 4 large eggs
  • 1/4 cup half and half (I used whole milk because I did not have half and half)
  • 1/2 teaspoon salt
  • dash of pepper
  • Assorted add-ins (I used diced tomatoes, shredded cheese, diced orange and green bell peppers, and cooked bacon)


  1. Heat oven to 350 degrees F.  Spray 6-cup muffin pan with non-stick spray.
  2. Whisk together eggs, milk, salt, and pepper in a small mixing bowl, then evenly distribute among the muffin cups.
  3. Add about 2 tablespoons of add-ins to each cup.
  4. Bake the frittatas until they are puffy and the edges are nice and golden brown, about 20 – 25 minutes.

Fluffy Pancakes

This is a family recipe that my mom got from my baba, and I got from my mom.  Today I made them plain, but sometimes I like to add chocolate chips or blueberries to them.






  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1-3/4 cups milk
  • 1/4 cup oil


  1. Pour cooking oil onto griddle and spread around with a silicone brush to cover entire surface.  Preheat griddle to 325 degrees F.
  2. Mix together dry ingredients.  Beat eggs and add to milk and cooking oil.
  3. Make a well in the dry ingredients and add eggs, milk, and cooking oil.  Stir.  Batter will still have small lumps, but that’s okay.
  4. Wipe griddle surface off with paper towel (careful not to burn yourself).
  5. Pour batter to make pancakes, flip when edges appear slightly browned and the top is covered in bubbles.
  6. Serve with your favorite toppings or just with some syrup and margarine.  I love defrosting frozen strawberries to use as a topping!

    Yum! I love weekends too. (When Ryan is ACTUALLY home!) We had waffles today but those little frittatas look great! Maybe next weekend if seeding hasn’t started yet!
